Birthday Cake Recipe

I recently celebrated my birthday and after sharing some pictures of the macrobiotic birthday cake that my daughter Christel made for me, many of you asked for the recipe. She has shared the recipe below, together with a video where she also talks you through how to make it.

Healthy and delicious birthday cake

Cake Base

6 eggs

2,5 dl coconut blossom sugar

3,5 dl wholegrain, gluten free flour

2 tsp baking powder

6 tbsp taste-neutral coconut oil (melted)


1. Whip the eggs and coconut sugar until the mix gets an airy and light consistency.

2. Mix the baking powder in with the flour, and after that add it to the egg mix. Whip the mix until it is completely smooth.

3. Add the melted, liquid coconut oil and mix until the oil has mixed completely into the batter.

4. Pour into a round cake baking tin that you have added a thin layer of taste-neutral coconut oil to.

5. Bake at 175 degrees (Celsius) for approx 30 mins (until done)

6. Put in a cool place to cool down.


Berry Jelly Topping

4 dl apple juice

1 dl rice or coconut syrup

1 tsp agar-agar

2 tsp corn starch, dissolved in a little bit of water

400 g frozen berries of your choice (we used strawberries, raspberries and a berry mix)


1. Pour the apple juice, syrup and 4-5 frozen strawberries in a pot and bring to a boil. Reduce the heat and let the mix simmer for 4 mins.

2. Remove the strawberries from the mix and add the agar-agar whilst whisking the mix. Keep whisking until the agar is completely dissolved and there are no lumps. Let it simmer for another 2-3 mins.

3. Whilst stirring, add the starch and bring it to a boil. As soon as it boils, take the pot off the heat.

4. Place the frozen berries on top of the cake base and distribute evenly.

5. Pour the agar-mix on top of the berries and make sure all berries have had some of the mix poured over them. Let it cool down until the agar-agar stiftens.

6. Run a knife along the inside of the cake baking tin to ensure the cake doesn't stick to the tin anywhere. After that, remove the round, outer layer of the cake baking tin.

7. Enjoy with loved ones.
